This is a recipe I haven't actually tried, but I have been going through the Lion House Classics recipe book we got as a wedding gift. I haven't been ambitious enough to open it up, but now that I have I am wishing I would have sooner! I found a great roll recipe that I didn't screw up, it was so easy, and I stink at making rolls if they aren't Rhodes! I won't post that recipe unless someone requests it, I know most people have their own favorite that they use. These sound really good, I love carrot cake so I think I may like carrot cookies!
Iced Carrot Cookies
1 cup shortening
3/4 cup sugar
2 eggs
1 cup cooked, mashed carrots
2 cups flour
2 tsp baking powder
1/2 tsp salt
3/4 cup coconut
Orange Frosting (below)
In large mixing bowl, cream shortening and sugar. Add eggs; beat until fluffy. Add mashed carrots. Sift flour, baking powder, and salt; add to creamed mixture. Stir in coconut. Drop by teaspoonfuls onto greased cookie sheet. Bake at 400 degrees for 10 minutes. Cool, then ice with Orange frosting. Makes 4 dozen small cookies.
Orange Frosting
1 Tbsp orange juice
2 tsp grated orange peel
1 cup powdered sugar
2 Tbsp soft margarine
In small bowl, combine all ingredients; stir until well mixed.
I would assume that you could use a cream cheese icing if you wanted to. Someday I will try it both ways.

I've actually made these type of cookies- minus the coconut(bleh) they are yummy.
I'm so sorry you had to take him to the ER. We have had so many sick babies come in lately. And I'm the mean lady who has to take the xrays of the poor little ones. Now that I have Linc, I sympathize so much more for other parents. I've cried over children who aren't mine lately, its just sad. Anyways, I hope you feel better! It sucks being sick with a kid and Daddy is gone all the time. I'm sorry:(
I love these cookies! I thought my mom was the only one that made them.
