This is a meal my friend Katie's mom makes. She says it is the only thing her mom can cook well so it's pretty easy and it's really good.
Ingredients:
-Rice-A-Roni, Red beans and rice
-2 cups sour cream
-2 cups cooked, diced chicken
-Large can mild enchilada sauce
-burrito sized tortillas
Prepare box of rice-a-roni as directed. Add 2 cups of sour cream and 2 cups of diced chicken. Spray a large casserole pan and put some sauce on the bottom. Dip tortillas in some sauce, add filling and roll. Pour any extra sauce over enchiladas. Sprinkle with cheese, bake 30 minutes at 350.
Putting these together can take a while and can be pretty messy but they are delicious! I haven't made them for a while because I ate them too much while I was pregnant and I needed a little break. They are starting to sound good right now though...

I am absolutely sure. And don't say preggers, I HATE that word.
hate is such an ugly word... you did say you were in the mood for those enchiladas again. reminded me of your mother. she would crave a big mac when she was preggers, er, uh, i mean, expecting. and then get nauseated from eating one.
That's about how it was for me too. They always sounded so good but then they made me sick. I guess I don't HATE that word, but I do get pretty annoyed when people say it. I didn't realize it sounded like I was hinting toward that until I read it again after reading your comment...my bad.
DeAnna, you might as well just get pregnant again so you don't have to keep telling people you aren't.
