I am going to cheat a little today. I am going to post a recipe I got from the Silvey's and a recipe I got from Heidi.
Mexican Lasagna
1 lb ground beef
1/2-1 small onion, chopped
1 small can black olives, sliced (I didn't use them, but I only eat olives on pizza or on their own)
1/2 pkg. taco seasoning mix
2 cans tomato sauce
1/2 pint small curd cottage cheese
1/2 carton sour cream
1 can whole kernal corn
Tortilla chips, crushed
Grated jack cheese
Saute ground beef. Add onion, olives, taco seasoning mix and tomato sauce. Simmer. Combine cottage cheese and sour cream and set aside. Place crushed tortilla chips and place in bottom of casserole dish (pressing to form a crust) Cover with half of the meat mixture. Add 1/2 can corn and sprinkle with half of the cheese. Repeat with the rest of the ingredients. Top with grated cheese and cook at 375 for about 25 min or until very bubbly.
-These have a really good flavor, and if you use Mission tortilla chips they actually stay crispy after it has cooked (but leftovers don't).
Zucchini Brownies
1/2 c. oil
1 egg
2 tsp vanilla extract
1 1/2 c. sugar
2 c. flour
1 tsp. salt
1 1/2 tsp baking soda
1/4 c. baking cocoa
1 c. nuts (optional, I don't use them)
2 1/2 c. grated zucchini
1 c. chocolate chips
Cream together oil, egg, vanilla, and sugar. Add remaining ingredients. Blend until smooth. Spread into greased 9x13 pan. Bake at 350 for 18-20 minutes.
I love these so much more than the boxed brownies and even more than regular brownies from scratch

The mexican lasagna looks good...too bad ground beef is so expensive these days...
Glad you like the zucchini brownies! They are so moist. Scott would probably like the Mex Lasagna too.
I made the mexi lasagna for dinner last night and really enjoyed it. I was the only one who like it though. :(
